Spices are different from herbs. Herbs are green and can be used fresh while spices are always dried and often grated or ground into a powder. Remember to start with a small amount; you can always add more heat, but it's hard to take that heat away. If you do add too much heat then try adding some sugar. Sugar will help lower the spicy heat level.
